SIMPLE CRISP GREEN SALAD

This salad recipe, like many salad recipes, is quick, easy, crunchy and sweet. Undressed, this salad will stay fresh for 2 days. Pairs well with so many mains, and is perfect as a light meal in itself.

Equipment -large salad bowl, small airtight jar.

Keep fresh for up to 2 days (sealed tight, undressed)

Feeds 2 for a main, 4 as a side.

Pick, wash and cut lettuce however you like it (I like 2cm piece cut from the top of the leaf towards the root).
Slice cucumber and sugar snaps into smallish piece, add to a large bowl with the lettuce, gently combine.
Chop dill, mix through salad.
Slice or cube avocado, sprinkle over salad.
For the dressing:
In a jar, combine all ingredients. Adjust sweetness / acidity if need be.
Dress just before serving, top with roasted pine nuts, and if you like, pangrattato (You will NOT regret it).
2 baby gem lettuce bulbs
Handful sugar snap snow peas
1 large cucumber
5 sprigs dill
1 large avocado
1/4 cup roasted pine nuts

Optional: handful of pangrattato

Dressing:
1/3 cup olive oil
1 tsp Dijon mustard
1/2 lemon juices
1/4 teaspoon honey
Salt and pepper
