
PICKLED RED ONIONS
One of THE BEST jars to have in your fridge. Pickled onions really do make everything better. They are tangy, salty, sweet and add a slight crisp to every bite. Easy to prepare, budget friendly, and even a good gift idea if you have some spare jars lying around!

Equipment - medium saucepan, medium bowl, airtight jar/s




In a medium saucepan, bring the vinegar and water to a simmer. Add the salt and sugar, stir until dissolved.
Bring to a near boil, remove from heat and allow to cool for 20 minutes.
Using a knife or mandolin, thinly slice the onion, place in a medium bowl.
Pour the liquid over the onions, scatter the peppercorns through and stir to combine, making sure all onions are covered. Allow bowl to sit for about an hour before spooning onions and liquid into airtight jars.
Enjoy as a garnish, in salads, in any bread related dish or on a charcuterie board, also great w spicy curries, or mixed w sumac and parsley. Good w everything !
2 cups white vinegar
2.5 cups water
1 tsp maldon salt
1 tbl caster sugar
3 red onions
1 tbsp pepper corn
Can be eaten straight away (more crunch), though best to sit overnight, keeps for 3 weeks.
Makes 2 medium jars, or 1 large.
