
BIRCHER BOWL W RASPBERY & SEEDS
This is my most frequented breakfast; it's healthy, filling, packed with fibre and protein, and utterly delicious. It is crunchy, juicy, tart and extremely satisfying. It's also great for meal prep! And it's very versatile.

Equipment - 3mm vegetable grater, mixing bowl, airtight container.




Bircher Mix
Grate apples into a bowl.
Add cinnamon, chia seeds, almond slivers and oats, mix well.
Stir the yogurt and orange juice through.
Add a squeeze of honey and give it one final mix.
Store in an airtight container in the fridge, preferably overnight (though if you can't wait, it's still delicious right away).
To serve
Scoop your desired amount into a bowl.
Top with a spoonful of yogurt, lots of raspberries, and generous sprinkling of seed mix.
Mix is best to rest overnight, though it can be eaten straight away. Keeps for 4 days refrigerated.
Makes enough for 2 - 3 serves.
Bircher Mix
2 large apples (any kind)
1/2 tsp cinnamon
2 tbs chia seeds
1/2 cup almond slivers (not flakes)
1/2 cup oats
1 cup greek yogurt
1 orange, juiced
Squeeze of honey, to taste
Toppings
Spoonful greek yogurt
Raspberries
Mix of pepitas, sunflower and chia seeds
